Cobia Fish Wontons (pot stickers)


1 lb Cobia filet, diced about 1 inch thick

½ cup chopped green onions

½ tsp blackening seasoning

1 package of wonton wrappers (available in the produce section)

Sweet chili sauce for dipping (available in the Asian section)

Combine the first 3 ingredients in a food processor and pulse until   

the consistency of hamburger.

Lay out wonton wrappers, and place about ½ tsp of the mixture on each one. Fold as per wrapper package instructions.

Steam in batches for 3 minutes (a wire rack over boiling water with a lid works if you donít have a steamer).

At this stage the wontons can be frozen or refrigerated.

When ready to serve, pan fry the wontons in batches in a little canola oil until just lightly browned. Serve with sweet chili dipping sauce for a great yummy appetizer! Better make heaps, they wonít last long!

Serving suggestion; wontons with sliced fresh mango, drizzled with the sweet chili sauce.
