Dapper Snapper Fish Dip
1tbsp canola oil
½ cup chopped onion
2 cloves garlic pressed
1lb snapper fish filets cut into 1 inch cubes*
1 tbsp Cajun or blackening seasoning
¼ cup light mayo
1tbsp sweet pickle relish
Juice of ½ lemon or lime
½ cup chopped green onions
Salt & pepper to taste
Tabasco Sauce
In a medium nonstick saucepan add fist three ingredients and sauté until the onions are just cooked through.
Add the fish and the Cajun or blackening seasoning. Turning once sauté until the fish is just cooked through, do not over cook.
Chill in refrigerator until cool.
Add the next four ingredients to the fish mixture. Mash and stir until well combined.
Salt and pepper to taste and chill really well until ready to serve.
Serve with crackers or bread with Tabasco on the side.
Additions…add either ¼ cup of capers or ¼ cup of sliced olives for an interesting flavor change. If you do this taste before adding any salt.
 * I use Red Snapper but other varieties can be used.
